Beer-Battered Onion Rings
These were a big hit at our house. The addition of the beer added a wonderful flavor to these onion rings.
Beer-Battered Onion Rings (adapted from Paula Deen)
Ingredients:
2 c. all-purpose flour
1 t. salt
1 t. cajun seasoning
1 (12 oz.) bottle beer
3 large onions, sliced 1/2 inch thick and rings separated
Vegetable oil, for frying
Ranch sauce (Recipe follows)
Instructions:
In a medium bowl, combine flour, salt, and cajun seasoning. Whisk in beer until smooth.
In a fryer, pour oil to approximately 3 inches deep. Using batches of onions, dip onion rings into batter. Let the excess drip off. Carefully lower onions in hot oil, and fry for 2 - 3 minutes or until golden brown. Place on paper towels to drain. Serve with Ranch Sauce or your favorite dipping sauce.
Ranch sauce
Ingredients:
3/4 c. sour cream
1/2 c. plain greek yogurt
2 T. cream
2 T. Ranch dressing mix
1/2 t. garlic powder
1 t. paprika
Instructions:
Mix all ingredients together and serve.
Enjoy!
